Chicken Parmesan

Wednesday night we had some friends over and I decided to be brave and try a new recipe. I wanted pasta, but not the standard lasagna. I scoured thru my usual blogs that I stealborrow recipes from. Nothing was talking to me, so I went to my back up site and struck gold. I had never tried my hand at Chicken Parmesan, but this was SO good. It was probably a few more steps than I would take for a normal weekday meal, but it was worth it! Make this, you won't regret it.

P.S. This recipe uses 4 chicken breasts, I used 6 and had enough breading ingredients to cover them.

On a side note, don't do this before you start.



One roll of paper towels later...

Chicken Parmesan
  • 4 chicken breasts {I used 6}
  • 4 whole eggs
  • 1 cup Italian-style bread crumbs
  • 1/4 cups Grated Pamesan cheese
  • 1 cup flour
  • 1 teaspoon salt
  • 1 1/2 teaspoon pepper
  • 1/2 cup olive oil
  • 3 tbs butter
  • 1 1/2 jars Marinara sauce {I used Emeril's}
  • 2 cups shredded Mozarella cheese
Prep:

Put each chicken breast between two pieces of plastic wrap or parchment paper and pound them out to a uniform thickness, no more than about 1/3-inch thick.

Whisk the eggs in a pie plate to blend. Place the bread crumbs in another pie plate and add cheese to the bread crumbs. Place the flour, salt and pepper in a third pie plate.

Coat the chicken completely with the flour mixture, patting to adhere. Dip the chicken into the eggs, then coat completely with the bread crumbs and cheese mixture, again patting to adhere.

Heat oil and butter in a very large skillet over medium heat. Add chicken, in batches if necessary, and cook until golden brown and the center reaches 150 degrees, about 6 minutes per side. Grease a baking pan with the baking pan with a splash of olive oil and transfer the chicken to the greased pan . Sprinkle with freshly grated parmesan cheese, cover with marinara sauce, and sprinkle with mozzarella cheese.

Bake at 350F for 25 to 30 minutes.

Fall...Where are you?

As one of my coaches used to say, "we're still just pluggin' away". {sigh} That sentence just made me shudder...oh, the memories. ANYWAYS...could you please check this guy out? Oh my word, if I didn't have any self control, he may just make me want to have another one. NOT happening, by the way. Mason was AWESOME for his newborn session. I got in some good practice, because I have not one, but 2 sets of twins to photograph in the coming months. SO exciting.

Have y'all checked out Zulily.com? I finally bit the bullet and purchased some boots for Emery a couple of weeks ago...can y'all get over these? I can't.



You have to sign up with your e-mail for the Zulily daily e-mails, but you can find some GREAT deals. I think I paid $20 for those boots, and that was with almost $6 shipping! Well worth the cuteness, don'tcha think?!

Football Friday

Whooooops. I've been pretty good about getting with Channa about when our Woods games are. Yeah, not so good this week...totally slipped my mind today! The Woods plays their big rival Saturday night, Cy Fair...{can I please mention how much I don't like Saturday night games...that means win or lose, Sunday is totally SHOT}. Moving on...we're hoping for a turn around this weekend to get out from our 0-2 start. If we lose this game, it will NOT be good.

On a more positive note, I made this today.


Here's to praying for a win this weekend! Hope all goes well with all the other teams out there!

Many Faces...

I'll start off with our pre game picture from Saturday evening. To say it was miserably HOT, maybe a bit of an understatement. So, this cute overall outfit didn't even last the first quarter. Luckily, I had a back up 'cooler' outfit in the bag. Oh, and don't mind that Emery already had the bottoms unbottoned before we left.




Moving on...I had to share this one. I'm starting Em off on my fascination with all things Southern Living. I'll have her reading the Paula Deen cookbooks next week.



This evening I decided it'd be fun to do a little mini shoot of the kids in the bathtub. Why, you might ask? Um, no brainer...they're confined and can't run in opposite directions! So, I'll finally get to the title of this post: The Many Faces of Trey & Emery! Enjoy!

8 Questions

Channa over @Life As A Coaches Wife tagged me in 8 questions. It's a good thing, because I was starting to wonder what I could blog about. I could stand on the top of the house and show my excitement that I am going to the Wildcat game tomorrow night, SOLO. Yep. No kids. I love Trey and Emery more than life itself, but to soak up the first game of the season without having to strap Emery to the stands with duct tape...makes me happy! :) Anyway, back to the questions! Feel free to play along. I think I'm supposed to tag 8 people, but since I've been so boring lately I may not have 8 blog readers left. :)

1. What is your favorite time of the year and why?
Fall...I could list a ton of reasons why. Football season. Pumpkin spice scented candles. Cooler weather. CRAFT SHOWS. The colors. Cooler weather...did I mention that already?

2. If you had one hour of alone time what would you do with it?
A pedicure...if you saw the state of my back to work feet, you'd agree with me.

3. What is your favorite TV show?
One show? Not sure I can do that. I'll list my guilty pleasure shows: Real World, Desperate Housewives of NJ {please don't judge}, Bachelor Pad {again, no judging allowed}, GossipGirl, and One Tree Hill.

4. What is your favorite meal?
Sushi!!! Can't get enough of it. Choo Choo sushi is a dangerous place...conveyor belt of sushi that you can just keep grabbing...

5. Date night in or Dinner out?
Out. Most definitely out.

6. What is your current obsession?
Photography.

7. Best gift you ever got?
That's a tough one. I'm going to go non-materialistic on this one. Last year at Coaches Outreach, the Saturday of the retreat was the 15th anniversary of my dad's passing. The last time I saw my dad alive, he was singing I Saw the Light by Hank Williams {crazy, I know}. Joe chatted with the worship leader {who is AMAZING} and had everyone up singing and clapping...not me, I was bawling like a baby, but it was one of the sweetest things Joe has ever done for me.

8. If you won the lottery what would you do with the money?
Tithe 10%. Pay everything off. Kids college fund. Buy land, lots and lots of land and build a family compound for my family and Joe's family....I could keep going and going.
