I really do like to cook. I do. However, if it's a busy night, I'm probably the first one to say "ain't doin' it!" Here's what goes thru my mind: {a} by the time I get home, get the kids unloaded, prep dinner, cook, clean up the kitchen, it's gonna be 8 o'clock {b} I have to grab such and such at the store, which means I have to unload both kids and get thru the store saying, "no, we don't need that" down every aisle Trey sees something he wants, and {c} I'm whooped, I don't wanna cook!
Again, I really do like to cook. Okay, moving on. I came across two recipes lately that were super easy and got thumbs up from Joe.
The first one was inspired from

BBQ Sliders...
You could obviously make the bbq, but we made these on a night that we didn't have time, so I settled for some of this...{don't judge}
I put a little bit of butter on each roll, and toasted it in a pan on the stove. While I was doing that, I heated up the bbq in the microwave. When the rolls were done toasting, I put a slice of Monterrey Jack on each bun, scooped some bbq on it and wha la...I made a platter of the sandwiches, and then just nuked them for like 10-15 seconds to help melt the cheese.
I'm tellin' y'all Joe couldn't eat these fast enough.
Okay, second recipe:
Shrimp Nachos!You'll need:
- 3/4 lb cooked/peeled shrimp...I used a frozen package {gasp}
- 1 package shredded cheddar/monterrey jack cheese
- 1 - 4 oz can chopped black olives
- 1 - 4 oz can chopped green chiles
- some green onion chopped
- 1/2 cup mayo {used light}
- Bag of Lay's Scoops chips
I chopped up the shrimp and put into a bowl and added everything but the chips and mixed it all up! On a cookie sheet, laid out the chips in rows...simply scoop some of the shrimp/cheese mixture into each of the scoops. Bake at 350 for 5-10 minutes, or until the cheese is melted/bubbling.
