I have...

The BEST husband EVER. Why? Not because he washes dishes, or helps me clean {he does do that}...but, because he had the patience and the know how to FIX my hard drive!! I didn't have to disassemble it piece-by-piece after all! Y'all...I'm not even kidding, I could hardly breath when I thought about what was on my drive. Was it replaceable? Some. Not all. Have no fear...it's all backed up now.

In honor of having my drive back, you're going to be blessed with some of my favorite old school pictures. Ready?

Don't worry about the title post, but those that know us from our SFA days should laugh. Trust me, you don't want the details.

Joe and I met our freshman year at Stephen F. Austin State University...He was there on a football scholarship, and I on a volleyball scholarship. If you know anything about college football/volleyball season, then you know that those athletes have to show up at least 2 weeks prior to school starting to participate in horrendous fabulous 2-a-day workouts...complete with ice baths at the end of the day. I may or may not have had my eye on Joe since orientation, but he was bringing his girlfriend from high school with him. I was patient! Freshman year came and went. Many pranks were pulled between the football players on the first and second floor of Hall 20 and the volleyball girls on the 3rd floor. Those two years in Hall 20 were entertaining to say the least. Moving on.

The spring semester of our sophomore year, I had a night class with another volleyball player and Joe had a different night class but in the same building. After afternoon/evening practice, Brandi and I would round up Joe and we would walk to class together...followed by a weekly dinner at La Carreta. If you don't know La Carreta, I'm sorry. In the meantime, I had joined a sorority {DZ, if ya wanna know}, and we were having a grab-a-date. After much prodding by my teammates, one night at La Carreta, I sucked it up and asked Joe to my grab-a-date. The rest is pretty much history. Believe it or not, that will be 11 years ago, next week! Whoa, were old...I think I just sprouted a few more gray hairs. We were married June 7, 2003, and it honestly gets better every year!

If you read my previous post, then you know I do not have access to some of the pictures I wanted to show off, so I'm stuck to what I have on my server at school.

Give me my data back! You are not corrupted. You have a home in my purse generally, where it appears that you may have made friends with something that was not good for your health. I'm asking nicely, don't make this get ugly. I will dismantle you and take you a part piece by piece if necessary.

Random...

I figured it was time that I clear off my iphone pics {hence the lovely quality}, so y'all are in for it. These go back a few months! Here goes nothin'!

*on a side note, can I tell you how pumped we are for Coaches Outreach?! We're going to the Lone Wolf, OK one this year...super stoked!

I have a video of Trey singing, and was about to upload it when I was handed the blue screen of 'death'...however, I obviously overcame that with a quick shutdown and a minor panic attack. The video will have to wait! It deserves its own post anyway. TGI - almost - Friday!

P.S. Starting to brainstorm ideas for our road trip to Illinois this summer...comment if you have any places that are a 'must go' between here and there!

Cooking

I really do like to cook. I do. However, if it's a busy night, I'm probably the first one to say "ain't doin' it!" Here's what goes thru my mind: {a} by the time I get home, get the kids unloaded, prep dinner, cook, clean up the kitchen, it's gonna be 8 o'clock {b} I have to grab such and such at the store, which means I have to unload both kids and get thru the store saying, "no, we don't need that" down every aisle Trey sees something he wants, and {c} I'm whooped, I don't wanna cook!

Again, I really do like to cook. Okay, moving on. I came across two recipes lately that were super easy and got thumbs up from Joe.

The first one was inspired from this awesome blog.

I'm going to call mine BBQ Sliders...



You could obviously make the bbq, but we made these on a night that we didn't have time, so I settled for some of this...{don't judge}



I put a little bit of butter on each roll, and toasted it in a pan on the stove. While I was doing that, I heated up the bbq in the microwave. When the rolls were done toasting, I put a slice of Monterrey Jack on each bun, scooped some bbq on it and wha la...I made a platter of the sandwiches, and then just nuked them for like 10-15 seconds to help melt the cheese.

I'm tellin' y'all Joe couldn't eat these fast enough.



Okay, second recipe: Shrimp Nachos!



You'll need:

  • 3/4 lb cooked/peeled shrimp...I used a frozen package {gasp}
  • 1 package shredded cheddar/monterrey jack cheese
  • 1 - 4 oz can chopped black olives
  • 1 - 4 oz can chopped green chiles
  • some green onion chopped
  • 1/2 cup mayo {used light}
  • Bag of Lay's Scoops chips


I chopped up the shrimp and put into a bowl and added everything but the chips and mixed it all up! On a cookie sheet, laid out the chips in rows...simply scoop some of the shrimp/cheese mixture into each of the scoops. Bake at 350 for 5-10 minutes, or until the cheese is melted/bubbling.

These were SO good! Let me know if you make these and what you thought! sidenote: I did NOT take these pictures...I was a google-napper. :)

This and That...

What a week/weekend! I mentioned Trey's Field Trip in my last post...I don't feel like posting all of those individually, so I guess you'll have to check them out here. We had such a great time, and the weather could not have been more perfect!

Thursday after school, we decided to head out to the Bluebonnets. We took Mimi along for the chaos fun! I'll let the pictures do the talking...

Where to go for bluebonnets you ask? Baylor Park in Independence!!! Suggestion: I would not go on a weekend! We left about 4 Thursday afternoon, and it takes about an hour from Cypress. Eat dinner in Brenham and then come home! Got home just in time for bed time...perfection!
