It's Wednesday, and I've cooked twice this week. Write. That. Down. I really do like to cook. Most of the time. However, let it be known that Friday nights are not one of those nights...my mom taught me well, you do not cook on Friday nights. You drink. A margarita. Moving on...to tonight's recipe. I found it this blog...she has super cute stuff and ideas, you should check it out.
Okay, okay...the recipe.
I'm gonna call them Spinach Lasagna Roll Ups. {SO easy!}
You need 6 lasagna strips, boil them like the box says.
In a bowl, mix the following{while the noodles are boiling}
1 package of frozen spinach - thawed
2 cups shredded mozzarella
1 tbs grated parmesan
2 eggs
some salt/pepper to taste...I also added some garlic powder
When the noodles are finished boiling, lay them out flat and then spread some of the spinach mixture down the noodle. She took good pictures of this...I didn't. Roll the lasagna and set in a casserole dish. Pour whatever spaghetti sauce you like on top and bake at 350 for about 30 minutes. We had this with a piece of Texas toast, YUM. I made 6 roll ups, and still have 1 1/2 left for lunch tomorrow. I will be the envy in the teacher's lounge tomorrow!

Show Us Your Life - Dinner Recipes
Who can pass up sharing recipes? Kelly over at Kelly's Korner has a 'Show Us Your Life' theme each this week. This week is recipes and I thought I'd participate, you know...so I don't feel guilty stealing the other recipes. I know I've posted this on here before, but hey...my brain is tired. :) Hope y'all have had a great week and are as excited for the weekend as I am!
The Tickle Family Meatloaf:
1 1/2 lb. ground beef
1 1/2 rows of saltine crackers
1 med. onion, chopped
1 egg
1 1/2 tsp. salt
1/4 tsp. pepper
4 tbsp. ketchup
1/2 cup milk
Sauce:
4 tbsp. vinegar
4 tsp. brown sugar
1/2 cup ketchup
2 tbsp. Worcestershire sauce
1/3 onion (left over from above)
*I always double this, b/c we love the sauce...
Mix the meat, crushed saltine crackers, beaten egg, 2/3 chopped onion, salt, pepper, ketchup, and milk. Form into loaf in 9 x 13 pan. Pour sauce mixture (see below) over the top of the loaf and bake at 325 degrees for 1 hour.
What's so special about meatloaf? This one...it's the sauce! This is by far one of our favorite dinner meals. It makes for the best left overs too! We were blessed with this recipe from one of my college roommates. We would double/triple the recipe and have a house full...memories!
Head on over to Kelly's Korner to find more recipes!

Counting the Days...
Ahem, {let me clear my throat}..."We now interrupt this marriage/family for football season!" Can you hear the bands playing? We're ready for it though, I was just telling Joe that this really is my favorite time of year. Really. It is. You may not believe me, and I may be complaining in about a month, but just re-direct me back to this post. I am ready. My favorite time of year by far...well, that is once the temperature drops below 90! Joe has started back to work, but we are super stoked that he has this weekend off before they kick it into high gear.
Anyway, I've been slacking on my posts. Maybe it's because I'm not in school, and not in front of a computer for 5+ hours a day. I am the queen of sneaking in blog posts between classes, or maybe during class...I'll never tell.
We haven't been up to much, really. I promise, or I would share. We did get to take the kids, and Jana, to the circus last week...thanks Morgan's! The seats were fabulous, and Trey LOVED it. I jacked this picture off of google, because I might have been the only person in Reliant, that chose not to bring my camera. It was a great show, see...
Another major event this week was that I cooked dinner! I know, shocking. I really do love to cook, we just find a better reason to eat a sandwich on the run or something. We have been kickin' tail on the whole 'limiting' the eating out thing. Since you're all wondering what I made, you know you are. I'll share a recipe that we like...
Tortilla Lasagna:
This is one of my favorites, because the possibilities are endless and can totally be jazzed up however you like.
You'll Need:
1 - 1 1/2 lbs. ground meat
1 can refried beans
1 can corn, drained
1 small can tomato sauce
1 packet taco seasoning
1 package shredded cheese {I used Mexican blend}
Tortillas
Start with about a pound to a pound and a half of ground meat, and brown it. Add whatever seasonings, but I just added a taco seasoning packet and added the water that it says on the packet. I sauteed half of an onion in with the meat too. Once the meat is browned, I also add a small can of tomato sauce and a drained can of corn. Got it? That's all for the skillet. The rest is done in the casserole dish.
In a 9 x 13, I put a couple spots of refried beans on the bottom and stick the tortilla on the bottom...the beans hold the tortilla in place. {genius, I know...ha!} After the bottom layer of tortilla I smear about half the can of refried beans (a thin layer) across the bottom. On top of the beans, I spoon in half of the meat mixture. Add desired amount of cheese to the top...and re-layer. Tortilla, beans, meat mixture, and cheese. {I mix it up a bit, by putting another layer of tortilla on top of the meat and putting the cheese on top of the tortilla} Throw it in the oven on 350 degrees for about 10-15 minutes to warm everything up. Serve with tortilla chips, sour cream and whatever else you like. I like to serve a tex-mex kind of salad. I jazzed up our ranch dressing that night and spooned in some salsa to the ranch...YUM!
P.S. I jacked this picture from google images too...I promise I'll get my camera out tomorrow. I hope!

Corn Dip and Party Sandwiches
Just thought I would share a few of the recipes I used today! The corn dip is a party staple around our circle of friends. The sandwiches were something new, and came highly recommended by my mom. They were definitely a hit, and I am excited that there were 2 left for me to take to lunch tomorrow! Stay tuned, the party post is coming next...I'm trying to get it in tonight so I can get Not Me Monday in tomorrow!
Okay, Corn Dip first! Here are the ingredients:

:: MMM....Thanksgiving! ::
Okay, in honor of Thanksgiving I thought I'd share a few recipes. My contribution to tomorrow's yummy dinner is going to be Corn Casserole. A Rhodes family staple! Yes, there have been heated arguments between Cody and I who will finish it off!
Corn Casserole (serves 4 to 5)...I will be tripling it tomorrow!
1 - can cream style corn
1 - can whole kernel corn, drained
2 TBS chopped onion
1/3 cup milk
1 - egg, beaten
1/2 cup cracker crumbs (I use fat free saltines)
1/2 cup shredded cheddar cheese
2 TBS melted butter
1 TBS sugar
1/4 TSP salt
dash of pepper
Combine all ingredients and mix well. Pour into a greased 2-quart casserole dish. Bake 1 hour at 350 degrees.
On to another staple at our house, and I can't remember if I've posted this one or not. I did a quick scan of the 94 posts (holy cow!), and didn't notice it, so oh well if it is on here twice...It is THAT good! :) Today Joe and I were cleaning up the house before he had to go to work, and I made a little bargain with my mom. If she brought me some Steak -n- Shake for lunch, I would cook dinner. What a deal! :) Here's the main dish for tonight...This recipe was one of Joe's favorites growing up and his mom shared it with me. Thanks Billie!
Poppy Seed Chicken
4-5 Boneless skinless chicken breasts OR tonight I will be using a Rotisserie and just shredding it up! (If you do the breasts, boil and cut them into bite size pieces...you could even save the broth)
*arrange the chicken on the bottom of a 9 x 13 dish
Mix the following ingredients and pour over chicken
Once the mixture is on the chicken, crush 1 sleeve of Ritz crackers and sprinkle on top of casserole. Then drizzle 1 stick of melted butter over the crackers. (I use I Can't Believe It's Not Butter)
Heat casserole at 350 for half an hour. Enjoy!
Hope everyone has an awesome day tomorrow, we all have so much to be thankful for!
